Spiced plum, violets and black pepper on the nose, combine with raspberry, worn leather and seamless cedar on the palate. Her key attributes are a sleek texture and lengthy finish. Showing a youthful elegance now, this style will develop further with time in the cellar.
Harvest & Winemarkers notes:
These syrah bunches were hand picked from the terraced hillside vineyards, and de-stemmed into open top fermenters without crushing. The juice was allowed to undergo a wild ferment, and at its peak, was gently hand plunged three times a day. It then rested on skins for a further 27 days to ensure tannin development before being pressed to a selection of French barriques. Malo-lactic fermentation took place in barrel after a winter resting on gross lees. The wine spent a total of 20 months maturing in oak prior to racking and bottling under Stelvin Lux.
