“The Semillon and Sauvignon are both hand selected in the vineyards and subsequently, whole bunch pressed in a pneumatic press on a long slow gentle cycle straight into a variety of stainless steel and seasoned French oak 500 litre puncheons (no new oak is used). The parcels are fermented separately using indigenous yeasts, no stirring. Three months in barrel and tank and once blended the wine is run into a large tank to sit on lees for another four months. The wine has beautiful bouquet, floral, blossoms but also beautiful citrusy character. Loads of freshness, at this price, this is a bargain” – B.I Wines & Spirits, May 2016
