Certified organic and biodynamic. 2019 was a normal year in terms of weather; not too hot, not too rainy. Old vines. A long, slow pressing and spontaneous fermentation. The wine is made in large casks, 80 to 120 years old. On lees for nearly a year. Tartaric acid 6.6 g/l, RS 1 g/l. A waxiness that leans into honey and marmalade aromas. Smells quite a bit more evolved than the 2020 but, interestingly, there is still some petillance! More bitterness, more edge than the 2020 – frugal but high impact and pungent and very, very long.
