Aromas and flavors of warm plum cake, violet, red licorice, blackberry coulis and cherry preserves glide seamlessly along here, with just a light underscoring of alder adding texture. The 2004 Pavie-Macquin is not especially complex or nuanced, but it is exquisitely delicious and also a fabulous choice for drinking now and over the next few years. Leather, spice, chocolate and licorice fill out the layers effortlessly. More than anything else, the 2004 is a wine of total pleasure. May 2020

A noble, complex nose of flowers, beef blood, black currants, licorice, and truffles reveals surprising evolution. The full-bodied, powerful wine exhibits stunning concentration, beautiful richness, sweet tannin, and a long finish. A blend of 75% Merlot, 20% Cabernet Franc, and 5% Cabernet Sauvignon (all from a bio-dynamically farmed vineyard), the 2004 Pavie-Macquin is another dazzling success from the brilliant winemaking team of Stephane Derenoncourt and Nicolas Thienpont.

Flowers, licorice, espresso, spicy blackberry and plum notes start the wine, which is further improved with its mineral, fennel and black cherry palate. This could still soften and develop with a few more years. Tasted Nov 2014
