Full bottle 1,650 g. 55% Chardonnay, 30% Pinot Noir and 15% Pinot Meunier, hand-picked from the Montagne de Reims, the Côte des Blancs, Les Riceys, Montgueux and Vitry-le-François, separately vinified in stainless-steel vats followed by malolactic fermentation. Aged for 3 years on the lees in stainless steel, with some spending a few months in stainless-steel eggs. Winemaker Julian Gout. TA 4.3 g/l, pH 3.1, RS 6 g/l. Available in over 200 shops. Clean, fresh, lots to enjoy with this bottling of Ayala. Gentle mousse, nice purity on the palate, dosage is very well judged and not over-sweet. The headline price is £38 at which it is not good value. But wait for one of Waitrose’s Buy 6 Save 25% promotions and ‘make hay’. (AWH)

Pale gold. Oxidative tone to stone fruit and red cherry. Biscuity, gentle lees notes. Fairly fine mousse, with apple and nutty lees. Chalky palate. Refreshing, if not the most complex. (TJ)

Full bottle 1,646 g. An assemblage of 70 crus, reserve wines from 2016, 2017, 2018 and 2019. 55% Chardonnay, 30% Pinot Noir, 15% Meunier. Made from 120 small micro-vinifications. Dosage 6 g/l. Sur lattes for four years. Pears and gentle biscuity notes. Well-balanced with a nice bite of refreshment and structure on the end, but overall, quite straightforward. Not complex and the finish fades rapidly. I see it's currently discounted to £26.99 at Waitrose, which seems to be a more appropriate price than £35. (TC)

Previously only available in top restaurants, the Brut Majeur Extra Age has benefited from an additional 12 months' ageing in the Ayala cellars, providing depth and savoury complexity. You can certainly smell the age on this. But the overall impression is of a rather sweet champagne on the palate. A little frothy. Not bad and I certainly wouldn’t turn it down but it's not thrilling. (JR)
