Next-level Assyrtiko! The finish (which I’m still thinking about) is just incredible – so long, and so salty – almost endless. Creamy richness on the mid-palate from extended lees ageing, takes the edge off the laser-like acidity. There is perhaps more fruit character here than often found on Santorini Assyrtiko, with just-ripe white peach, lime oil, and jasmine tea notes, but there is also salinity in abundance. Very fine crystalline structure on the palate. Just wonderful finesse. Completely unforgettable.
