A wonderfully dry and refreshing Manzanilla with the classic salty tanginess. Floral, nutty and appley, this En Rama is meaty, savoury and earthy but still elegant and balanced with a lovely fresh acidity that is expected.

From the Balbaina Alta vineyard. Cold stabilised and lightly filtered. Pale gold and a little darker than the non-en-rama La Gitana. Much more intense and savoury than the non en-rama, less polished but more aromatic. Almost musty but definitely not corked. Spicy and dried grasses again as well as a salty yeast intensity. Very saline and mouth-watering on the palate. Not quite as deep on the palate as some but long. Mouth-watering finish. (JH)

Pale-medium gold. Delicate, green-apple skin and scented camomile, with subtle salty, nutty almond. Palate of fresh apple, salt and olive with some creaminess. Long and salty. Lovely expression. GV (TJ)

Full bottle just 1,175 g. Bottled spring 2021. 100% Palomino Fino grapes grown on white albariza soils in the vineyards of Balbaina, at 110 m elevation, and Miraflores, aged under flor in cellars 300 m from the estuary. Just 35 barrels of the solera, we are told. Though that sounds quite a lot to me! Very pale gold. Very bready on the nose with notes of almond stones, light and saline – so appetising! – and bone dry on the end. (JR)
