Working with minute parcels, Bouchard vinifies each site separately and bottles at lower pressure, creating an ultra-refined, vinous style with a silkier mousse. His yields are astonishingly low, just 26 hectolitres per hectare, among the lowest in Champagne. This meticulous approach allows him to pick at optimal ripeness, giving his wines their hallmark richness and energy.
