Extraordinary what we discovered in Cornwall – yes, the pun is entirely intentional... There is no limit to where pastis is made but this is the only one to be crafted in the UK. A small, independent, family owned production, it is infused with gorse flowers (handpicked from the nearby cliff tops) as well as green aniseed from Turkey, star anise from China, liquorice root from Uzbekistan, coriander seeds from Bulgaria, juniper berries from Kosovo, angelica root from Poland, orris root from Morocco, green cardamom from Guatemala, cinnamon from Madagascar – not to mention fresh orange, lemon and grapefruit zest and blended with spring water from the North Cornish coast.
The taste is defiantly dry, with a herbal aniseed and light citrus sweetness. It is made in tiny batches, fewer than 300 bottles a time, distilled in a flame-fired copper pot still called Tamara, goddess of the Tamar; every bottle is hand-filled, labelled, waxed and signed by founder and Head Distiller Tarquin Leadbetter.
Delicious with iced mineral water or plenty of orange juice and lots of ice. Bottled at 42% abv.
