Rose, iris, black tea, humus, cinnamon, black raspberry, and suggestions of red meat complexly scent the Jadot 2007 Chambertin Clos de Beze, following on a firm slightly chewy but satisfyingly buffered and positively dense palate. Ripe raspberry and plum as well as brown spices emphasize the sweet side of the wineâs personality as it launches into a long finish. Unlike the corresponding Chambertin, here I suspect that the tannins will remain supportive while fading even further into the fabric of a wine that combines the ripeness and generosity inherent in the best 2007s with an unusual degree of mouthwatering, soy-like savor as well as the structure and energy to support 12-15 years of aging if one chooses.
