Unoaked. pH 3, TA 6.8 g/l. Evolved and complex: cedar, ripe citrus, yellow plum and green fruits and yet still all the tension and acidity of Santorini Assyrtiko. Smooth, rounded, both mouth-filling and persistent. Firm, rounded and rich as well smoky, honeyed, salty, fresh and flinty. Chewier than the 2020. 'A vintage with more hardship' says owner Yannis Valambous. A little less intensity on the mid palate than the 2020. Mouth-watering, even though the acidity tastes a little softer in the context of all that evolution. (JH)
