An estate that is at once both truly historic and very forward-thinking, under the ownership of the American Wilmers family and stewardship of Veronique Sanders, Haut Bailly has been producing wines of incredible quality for the past 10-15 years – although of course their history goes back way, way further than this. In fact the estate has some of the oldest vines, and one of the largest proportions of old vines, of any estate in the region. These old vines are all-important as the deep, complex root structures allows the vines to search out the rainwater left deep in the soils by winter and Spring rains, keeping the vines hydrated and fully operational even during hot dry summers.

High Cabernet Sauvignon and the oak upped to around 60% new, higher than usual but well integrated at 17 years on. This is showing well right now, fully in the drinking window and extremely moreish, gentle fine tannins, elegant architecture, soft blackberry and blueberry fruits, velvety texture and a drawn out finish. Tasted at BI Wine & Spirits' 10-Year-On tasting, the 2007 Haut Bailly has a beautiful, quintessential Pessac bouquet with touches of warm gravel filtering through the black fruit. The palate is medium-bodied with impressive, tightly knit black fruit laced with cedar and white pepper. There is superb weight in this 2007 considering the vintage, doling out fine mineralité on the persistent finish. Very fine, but I would actually wait another couple of years before broaching. Tasted February 2017.

Good deep ruby-red. Primary, high-pitched aromas of crushed berries and spices, with a whiff of artificial flowers. Juicy, pure and intense, with lovely cut to the raspberry and spice flavors. Finishes with good length and lift and a lightly herbal character.

Deep garnet with soft rim. Subtle, leafy, scented, with a touch of dark savour, a bit like oak char. Super-smooth texture and an elegant restraint. But not terribly long. (JH)

70% Cabernet Sauvignon, 26% Merlot, 4% Cabernet Franc. Longer ripening season (130 days instead of the usual 100) compensated for a chilly August. A little light and evanescent. Quite a bit of acidity. Fruit is light. Just a little hollow. Tarry finish. Lacks fruit. (JR)

70% Cabernet Sauvignon, 26% Merlot, 4% Cabernet Franc. Red to rim. Light and airy with pleasant red-berry aromatics. Medium-bodied and round with gentle tannins. Lacks the intensity and structure of a top year but very digeste . Good luncheon claret. (JL)
